The Passport Menu takes diners on a culinary journey inspired by flavours from the USA, Mexico, China, Spain, Italy, Thailand, South Korea, France, Japan and the UAE. Each dish is crafted to feel recognisable yet unexpected, combining international techniques with Indian spices, textures and aromas. The concept aims to blur geographical boundaries, presenting dishes that resonate with global appeal while remaining rooted in Indian culinary identity.
As a first-of-its-kind concept within the Dubai Hills neighbourhood, the menu has been positioned as both adventurous and accessible. Among the standout offerings are Shawarma Kulcha, which reinterprets a Middle Eastern staple through Indian bread and spices, and Chicken Dim Sum infused with Indian aromatics. Butter Masala Mac & Cheese delivers a fusion of comfort food traditions, while Taco Chaat blends Mexican form with Indian street-food flavours. Vegetarian selections such as Paneer Croquetas further highlight the menu’s global reach and balance.
